One of my favourite Thai dishes of rice noodles, bean shoots, chopped peanuts, king prawns, and lime juice, chillies, fish sauce, galangal, coriander, Thai basil and a tiny pinch of palm sugar to flavour.
Usually wheat free but today fancied a snall slice of sourdough toast with smashed avocado and some mixed seeds sprinkled on top. Good carbs and healthy fats.
Organic scrambled eggs for protein
Smoked salmon for Omega3
A small grilled tomato.
Lasted all day on this big breakfast until an early supper.
