The last day of an Indian Summer with lunch by the sea with a healthy but delicious Asian fusion mix of scallop, seabass and tempura prawn on a bed of vegetables, noodles and peanuts.
.
It’s so easy to eat healthily when it’s presented beautifully and tastes delcious.
Its all about the flavours.
.
Even when you are cooking at home, however simple or basic the recipe or meal, if you take a bit of extra care and time to make it look appetising on the plate, you will feel more satisfied on a smaller portion.
You will crave less of the unhealthy sugary carb laden foods which give high/low spikes to your blood sugar and energy levels.

My supper party last night was a gaspacho starter with added chopped cucumber and croutons to add texture to the cold soup.
Then this home-cooked paella.
The rice was cooked in shellfish stock (lobster, mussels, chicken, garlic and onions in the vegetable water stock), and chicken thighs roasted first with crispy skin, chorizo, prawns, mussels, squid, and some sliced peppers to decorate.
I served it with a green salad.
Cheeses and strawberries and cream for pud.

Spiralize the courgettes.
Then saute in coconut oil or olive oil some onion, garlic, chopped red chillies, adding salt and pepper until soft and translucent.
Then finally add the spiralized courgettes, courgette flowers, and crab meat. This only needs cooking quickly as you dont want it to go too soft or mushy.
Finish off with some parsley.
A quick and easy low csrb and protein healthy meal!
